I’m such a Southern Belle. I find it impolite to host friends without making an appetizer or hors d’oeuvres…these were so cute and simple, perfect for our movie night! These little guys are my favorite summer snack ever!! Mini pineapple sandwiches bring back the fondest memories of my great grandfather Benford and running around on 4th of July with curly pigtails swaying in the wind…I could go on and on! My great aunt finally shared her recipe with me so I whipped up a batch!  They’re so simple and delicious! Just mix DRAINED (and I do mean completely drained) crushed pineapple, cream cheese, powdered sugar and cool whip! Slice bread into quads and spread mixture evenly! You can eat them right away like I did, or chill them in the refrigerator. Make them soon for yourself or guests, they’re perfect for cooling down in the afternoons with a glass of homemade lemonade or just as a light snack or appetizer!  Bon Appétit xoxo Sarina πŸ’‹ The Full Belly Diaries 🍴
