I found an amazing recipe for Easy Breakfast Potatoes! They were so simple to make and came out wonderfully &;&;

Ingredients:
2 large russet potatoes diced
2 tbsp olive oil (up to 3 tbsp)
1 tsp dried dill or parsley
1 tsp paprika
1 tsp pepper
2 tbsp grated Parmesan cheese
2 tsp salt
tip: you can make them spicy if you like by adding
1 tsp chile flakes

Preparation:
Preheat oven to 425 deg. 
Peel and wash potatoes. Dice potatoes in small cubes (about 1/2 inch thick). 
Place in a medium bowl. Add olive oil and toss to coat all potatoes. Add the rest of the ingredients and toss to mix. 
Place potatoes in a single layer in a 13x9 pan. Use parchment paper for easy cleanup …and so that the potatoes do not stick to the bottom of the pan.

Tonight I cooked baked chicken and an amazingly simple potato dish by the lovely food Queen Martha Stewart!

For the baked chicken I cut the breast lengthwise and coated with salt, pepper, garlic powder and barbecue chicken rub seasonings! Place chicken in foiled dish. Add 1/2 cup of orange juice (I used pineapple-orange juice) and just enough chicken broth (or water) to barely top the chicken breast. Top with diced onions and barbecue sauce (I used sweet Baby Ray’s) and cover with foil. Bake at 400* for 45 minutes or until  chicken is no longer pink in the center. I made an amazing chicken pot pie casserole…completely from scratch! Even the pastry puff crust! It was so delish :)

The recipe was from Paula Deen…you know that means yummy butter goodness! Or greatness for that matter!
