I’ve been eating a lot of Kale lately now that my garden is producing a good harvest about every other day πŸ’š

Yesterday I roasted a whole farm-raised chicken so I made the most out of the broiler and stewed the leftover carvings into chicken stock and used the shredded meat for chicken salad & broth noodles. Served with sweet tea and Kale salad with fresh tomatoes and mozzarella πŸ΄πŸ’‹βœŒ

I’ve been eyeing this head of kale for a few days now…to the Nutribullet you must go!

Can’t believe I’m just now getting around to my Christmas haul…giving the Nutribullet a try! I wanted something sweet and figured fruit was the healthier option…baby steps to eating clean.

Fresh picked kale, peppermint leaves, pineapple, strawberries, banana, frozen grapes, cherries and pineapple juiceπŸπŸ“πŸŒπŸ‡

Tonight’s food prep was simply stunning! I never knew how satisfying and rewarding growing our own food would be until we raised our own chicken! Knowing what is, or particularly what isn’t, in food is the first step to eating healthy and our Chavis Farm pastured boneless skinless breasts are above par! I pan-seared them with evoo, basil, oregano & cracked pepper then tossed in fresh dug Irish potatoes seasoned with paprika & garlic along with some frozen California red grapes into my cast iron skillet and the rest is history….πŸ‡

I went hard in the kitchen tonight whipping up what will probably become my new favorite go-to chicken dish! The fruity flavor combinations were mouthwatering and aromatically succulent…for a second I thought I was in Rome!

Pan-seared {Chavis farm raised} chicken breast with strawberry balsamic glaze, seasoned Irish potatoes and roasted California red grapes!

The secret ingredient for this recipe is Strawberry Jam…homemade, store bought, whatever floats your boat! Mix 3 tbsp with one tbsp of your favorite BBQ sauce and a few dashes of aged balsamic vinegar. Stir until smooth and brush over chicken breasts during the last 10 minutes of baking. I had some leftover so I used it as dipping sauce for my carved meat and potatoes, it was THAT GOOD! πŸ˜‹πŸ‡
