Tonight I cooked an amazing dish, Bourbon Street Chicken! It’s wonderfully sweet & spicy without being too hot.

The recipe can be found at:
http://www.bigoven.com/recipe/201809/Bourbon-Street-Chicken

Ingredients:
2 pounds boneless chicken breasts cut into bite-size pieces
1 tablespoon olive oil (1-2)
1 garlic clove crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tablespoon cornstarch (if thick sauce desired)

Preparation:
Heat oil in a large skillet.
Add chicken pieces and cook until lightly browned.
Remove chicken.
Add remaining ingredients, heating over medium Heat until well mixed and dissolved. (I substituted 2 tbsp of honey and molasses for the soy sauce)
Add chicken and bring to a hard boil.
Reduce heat and simmer for 20 minutes.

Serve over hot rice and enjoy!

Tonight I cooked baked chicken and an amazingly simple potato dish by the lovely food Queen Martha Stewart!

Here’s the recipe: http://www.marthastewart.com/336976/crispy-potato-roast

For the baked chicken I cut the breast lengthwise and coated with salt, pepper, garlic powder and barbecue chicken rub seasonings! Place chicken in foiled dish. Add 1/2 cup of orange juice (I used pineapple-orange juice) and just enough chicken broth (or water) to barely top the chicken breast. Top with diced onions and barbecue sauce (I used sweet Baby Ray’s) and cover with foil. Bake at 400* for 45 minutes or until  chicken is no longer pink in the center. Serve with potatoes…Bon appétit :)
