I love trying new things, especially at my favorite restruants. I ordered this BBQ chicken sandwich from Papa Bills not knowing how it actually was going to be served….but the name didn’t fool me. This sandwich was country at its best. Bbq’d just right like it was 4th of July weekend, slapped on a good ole piece of Old Fashioned Merita bread! Classic!

Since my weekend was so hectic and filled with food-on-the-go, I decided to cook a hearty meal that would definitely fill me up! Tonight I cooked Jack Daniel’s pork chops, candied yams and steamed broccoli with mozzarella & American cheeses! I’m still laying around feeling lethargic…but it was soOo worth it. Now I can take my multi-vitamin, maybe eat a small bowl of Raisin Bran Crunch before calling it a night! Hope your Tuesday was as blessed as mine!

Tonight I cooked baked chicken and an amazingly simple potato dish by the lovely food Queen Martha Stewart!ย
Here’s the recipe:ย http://www.marthastewart.com/336976/crispy-potato-roast
For the baked chicken I cut the breast lengthwise and coated with salt, pepper, garlic powder and barbecue chicken rub seasonings! Place chicken in foiled dish. Add 1/2 cup of orange juice (I used pineapple-orange juice) and just enough chicken broth (or water) to barely top the chicken breast. Top with diced onions and barbecue sauce (I used sweet Baby Ray’s) and cover with foil. Bake at 400* for 45 minutes or until ย chicken is no longer pink in the center. Serve with potatoes…Bon appรฉtit :)
