Tonight I cooked baked chicken and an amazingly simple potato dish by the lovely food Queen Martha Stewart!

For the baked chicken I cut the breast lengthwise and coated with salt, pepper, garlic powder and barbecue chicken rub seasonings! Place chicken in foiled dish. Add 1/2 cup of orange juice (I used pineapple-orange juice) and just enough chicken broth (or water) to barely top the chicken breast. Top with diced onions and barbecue sauce (I used sweet Baby Ray’s) and cover with foil. Bake at 400* for 45 minutes or until chicken is no longer pink in the center. Serve with potatoes…Bon appétit :)
