Looks like I got carried away with the chili…the messier the better right!? Either way, it was beyond delicious 💋

•Grilled hotdog with Sweet Baby Ray’s BBQ sauce, ketchup, mustard and chili
•Grilled burger with melted Italian blend cheese, ketchup, mustard and chili
•Baked tater tots with chili 😉
•Country style baked beans with bacon…yummy!

My sister planned an exquisite meal for my Birthday Saturday night. She cooked a huge pasta casserole. Her recipe was secret bUt I do know chicken, spinach, artichoke hearts and  Italian blend of cheeses were involved! She also cooked grilled asparagus with garlic and lots of butter, a meat & cheese tray and Greek salads that I will go into further detail later 😉

The brown stoneware dish, that was mine! It was three cheese stuffed tortellini with Alfredo sauce, maple bacon and mozzarella cheese! I also baked a loaf of “Everything  Italian” bread and made a gallon of Sweet Iced Tea!

I went all Chrissy Teigen on my plate pic…my food was so hot and good I forgot to take a pic, so my plate looks half eaten because it was. No further explanation needed.

Needless to say we were so stuffed we couldn’t make it to dessert! We waited an hour or so before putting the puff pastries in the oven…I can not thank Branson, my sister Lindsay, brother Kendall and Steven enough! My 26th Birthday dinner will be one of my favorite memories I’ll cherish forever 😍

The meatloaf was soOo flavorful! I don’t know if it was the bacon, worcestershire sauce or brown sugar but it was deeeeelish! I also topped the mashed potatoes with basil. Bon appétit ;)

Tonight I cooked meatloaf! I hardly ever stray away from my typical recipes but I found one that called for shredded cheese so I gave it a try! It was actually very good, a little bit sweeter (because of the brown sugar) than my normal tomato base meatloaf but very tasty and original! (oh yea, and I also added diced onions for extra flavor!)

I used this recipe: http://allrecipes.com/recipe/mini-meatloaves/ and opted for a square pan instead of mini muffins…

Mm mmmm gooooooood :)

Tonight I cooked baked chicken and an amazingly simple potato dish by the lovely food Queen Martha Stewart!

For the baked chicken I cut the breast lengthwise and coated with salt, pepper, garlic powder and barbecue chicken rub seasonings! Place chicken in foiled dish. Add 1/2 cup of orange juice (I used pineapple-orange juice) and just enough chicken broth (or water) to barely top the chicken breast. Top with diced onions and barbecue sauce (I used sweet Baby Ray’s) and cover with foil. Bake at 400* for 45 minutes or until  chicken is no longer pink in the center. Serve with potatoes…Bon appétit :)
