Tonight’s food prep was simply stunning! I never knew how satisfying and rewarding growing our own food would be until we raised our own chicken! Knowing what is, or particularly what isn’t, in food is the first step to eating healthy and our Chavis Farm pastured boneless skinless breasts are above par! I pan-seared them with evoo, basil, oregano & cracked pepper then tossed in fresh dug Irish potatoes seasoned with paprika & garlic along with some frozen California red grapes into my cast iron skillet and the rest is history….πŸ‡

I went hard in the kitchen tonight whipping up what will probably become my new favorite go-to chicken dish! The fruity flavor combinations were mouthwatering and aromatically succulent…for a second I thought I was in Rome!

Pan-seared {Chavis farm raised} chicken breast with strawberry balsamic glaze, seasoned Irish potatoes and roasted California red grapes!

The secret ingredient for this recipe is Strawberry Jam…homemade, store bought, whatever floats your boat! Mix 3 tbsp with one tbsp of your favorite BBQ sauce and a few dashes of aged balsamic vinegar. Stir until smooth and brush over chicken breasts during the last 10 minutes of baking. I had some leftover so I used it as dipping sauce for my carved meat and potatoes, it was THAT GOOD! πŸ˜‹πŸ‡

Cheesy basil pesto fettuccini with grilled shrimp and braided herb bread! First time making this pasta sauce and I don’t know if it was my fresh basil, basil blossoms or basil infused olive oil that sparked sensations on every taste bud in my mouth but boy was it amazing!

Basic baking powder biscuits using the recipe off the can but I added garlic salt & oregano, braided three rolled out pieces and topped with butter! For the sauce I combined fresh basil blossoms, two frozen basil cubes, basil olive oil and a pack of creamy Mac & Cheese powder #EasyPeasy πŸ΄πŸ’›

Tonight I cooked Pork Tenderloin with Sweet Apple Bourbon Glaze, Kentucky long beans, baked loaded sweet potato { both from the garden! } and savory cheddar cheese biscuits! Delicious was not the word! The combination of flavors and smells make the perfect Fall meal πŸ΄πŸπŸŽπŸ‚

Nutella Turnovers ~ these little guys are so simple and delicious! Unravel crescent rolls, scoop as much Nutella as you please in the center and cover with another crescent layer. Crimp edges with fork and bake as directed! Release your inner pastry chef, add maraschino cherries, bananas, strawberries, any berry for that matter, anything sweet you can imagine! The possibilities are endless! I topped mine with a mixture of cocoa powder and sugar! Caramel and whipped cream would be fabulous too! Bon Appètit

I had so much fun cooking our MNF dinner. We hosted my sister Lindsay and her boyfriend Steven over for a wonderful homemade Lasagna dish!

The Lasagna was beyond delicious! It had fresh basil and parsley from my indoor garden, and I used local homemade blueberry wine as the red wine reduction! Served with bacon, ham & turkey salad. Amazeballs!πŸ΄πŸ‘πŸ…

Yesterday I decided to make my own hand rolled lasagna pasta. I’ve made raviolis before so I knew it wasn’t a task I couldn’t handle. Besides, nothing beats fresh made pasta.Β

It said it was a 80-minute process. I started making the dough around 4:30. After forming the ball, it sat in plastic wrap for an hour or so. Around 6 o’clock I started rolling it out into lasagna pieces…talk about a hassle. I released all of my built up stress and frustration out on that rolling pin. No fancy smancy Italian pasta machine here. It took every ounce of strength in my bony arms to get it the desired thinness, but after I burned unnecessary calories my lasagna noodles were piling up on me! I rolled wayy to much for my pan, needless to say we will be having chicken & pastry soon ;)

But don’t let my long paragraph on dough making scare you. It really is an rewarding experience. After boiling ‘MY’ noodles to al dentΓ¨, and realizing that this whole process really worked and my pasta looked better than that non-French/Italian dried store bought stuff in boxes…I forgot about how much effort I put into my culinary dish.Β 

Homemade, fresh pasta…try it sometime!Β
