Tonight I cooked Pork Tenderloin with Sweet Apple Bourbon Glaze, Kentucky long beans, baked loaded sweet potato { both from the garden! } and savory cheddar cheese biscuits! Delicious was not the word! The combination of flavors and smells make the perfect Fall meal ๐Ÿด๐Ÿ๐ŸŽ๐Ÿ‚

Nutella Turnovers ~ these little guys are so simple and delicious! Unravel crescent rolls, scoop as much Nutella as you please in the center and cover with another crescent layer. Crimp edges with fork and bake as directed! Release your inner pastry chef, add maraschino cherries, bananas, strawberries, any berry for that matter, anything sweet you can imagine! The possibilities are endless! I topped mine with a mixture of cocoa powder and sugar! Caramel and whipped cream would be fabulous too! Bon Appรจtit

I had so much fun cooking our MNF dinner. We hosted my sister Lindsay and her boyfriend Steven over for a wonderful homemade Lasagna dish!

The Lasagna was beyond delicious! It had fresh basil and parsley from my indoor garden, and I used local homemade blueberry wine as the red wine reduction! Served with bacon, ham & turkey salad. Amazeballs!๐Ÿด๐Ÿ‘๐Ÿ…

Yesterday I decided to make my own hand rolled lasagna pasta. I’ve made raviolis before so I knew it wasn’t a task I couldn’t handle. Besides, nothing beats fresh made pasta.ย 

I used this recipe for the dough:ย

It said it was a 80-minute process. I started making the dough around 4:30. After forming the ball, it sat in plastic wrap for an hour or so. Around 6 o’clock I started rolling it out into lasagna pieces…talk about a hassle. I released all of my built up stress and frustration out on that rolling pin. No fancy smancy Italian pasta machine here. It took every ounce of strength in my bony arms to get it the desired thinness, but after I burned unnecessary calories my lasagna noodles were piling up on me! I rolled wayy to much for my pan, needless to say we will be having chicken & pastry soon ;)

But don’t let my long paragraph on dough making scare you. It really is an rewarding experience. After boiling ‘MY’ noodles to al dentรจ, and realizing that this whole process really worked and my pasta looked better than that non-French/Italian dried store bought stuff in boxes…I forgot about how much effort I put into my culinary dish.ย 

Homemade, fresh pasta…try it sometime!ย

These little guys are my favorite summer snack ever!! Mini pineapple sandwiches bring back the fondest memories of my great grandfather Benford and running around on 4th of July with curly pigtails swaying in the wind…I could go on and on! My great aunt finally shared her recipe with me so I whipped up a batch! 

They’re so simple and delicious! Just mix DRAINED (and I do mean completely drained) crushed pineapple, cream cheese, powdered sugar and cool whip! Slice bread into quads and spread mixture evenly! You can eat them right away like I did, or chill them in the refrigerator. Make them soon for yourself or guests, they’re perfect for cooling down in the afternoons with a glass of homemade lemonade or just as a light snack or appetizer!
